Chitinase activity in chitinase-rich foods?

Post by ParacelsusIII »

How much chitinase activity in units per milliliter is there in common chitinase-rich foods such as avocado, tomato, banana, beans, kiwi and chestnut?

I don't have the actual figures, but I would assume that you could use the dilution factor to extrapolate to the raw material assuming these extracts remained in the linear range.
