In the formation of soap there is a reaction of triglycerides with KOH. One of the components in triglycerides is oleo-palmitostearin (C55H104O6).
How is the reaction between C55H104O6+KOH?

C55H104O6 + 3 KOH=> C18H33O2K + C16H31O2K + C18H35O2K + C3H8O3

The Reaktion is given above.
Oleic acid is C17H33COOH
Pamitic acid C15H31COOH
Stearic acid C17H35COOH
These three acid are connected as ester to glycerine HOCH2CH(OH)CH2OH.

The soap reaction give the sodium or potassium salts.
RCOO- + Na+ or RCOO- + K+
