I think that manganese acetate is a basic substance, when that solution meets a strong acid like nitric acid, there will be an exchange reaction that creates a salt that neutralizes manganese nitrate and bubbles with CO2.

Your equation is not balanced.
Left side 10 H, right side 12
I dont see a redox reaction. If NO2 is developed ( it's a reduction from NO3- to NO2) something else has to be oxidised. Where is it in your equation.

Also not balanced. To much NO3-.
A mixture of manganese acetate and HNO3 gives only Mn 2+, NO3-, CH3COO- and H+ ions.
