magician can turn lemon juice into blood red.
which chemical to apply on the knife or blade to cut the lemon

It sounds like a simple acid/base indicator colour change.

From household products an amature magician can prepare boiled juice of red cabbage, which contains flavin (and is a high school chemistry practical). It will turn green in basic solutions, red in acids. Simply stain the knife an let dry until the cabbage juice becomes unnoticable ... until wet by the lemon juice

A professional might resort to methyl red indicator.
