Gelatin Conductivity

I measured the conductivity of gelatin and it worked but I have no clue why it conducts. Is this due to the H bonds or electrolytes or the chemical crosslinking structure, or is there something else I am missing?

Gelatine-water mixtures have a low conductivity due to the electrolytic impurities — also contained in pure gelatine; this increases with increasing concentration in a manner similar to that of an aqueous electrolyte.
