As the two toxic substances sodium Na and chlorine Cl together form a non-toxic compound NaCl kitchen salt and why its taste is salty and not bitter?

Every Substance has some characteristics. So there are healthy ones and others are unhealthy or poison. And also the taste buds react different, like sweet, spicy, salt, bitter, etc.
Its the matter how the human bring was built up .
