Hygroscopicity of Lecithin

Post by z a b »

Hello,

I would like to know whether lecithin is so hygroscopic as to increase its weight within minutes of being exposed to air.

Thanks!

Physical Properties. Lecithins are hygroscopic. In the air they form sticky, waxy masses.
